Always better to increase crank pulley to keep more belt wrap on the blower. Give it a try maybe you can keep it from slipping.

Is the fluid supposed to stay that bright red or is it ok to get a darker maroon?

The fluid will tarnish some but if real dark your running the unit to hard and it is over heating.
